In my race car I used an oil filter adapter that had a well in it for the temp bulb. The adapter came from one of the race supply houses. You could probably plumb something in between the oil pump and filter. Another possibility is to arrange something like a well that taps into the banjo bolt where the oil line leaves the block to go to the head.
I hate the thought of having something as delicate as the capillary tubing for the temp gauge at the bottom of the sump where something, like an errant stone, could shear it off.
