It's likely the cables are getting pinched, or they're routed wrong. Happens a lot on dirt bikes. Usually they're routed under/around the tank improperly. Ryan Phoenix, AZ RobertWichert wrote:

Another possibility: I've had a sticky throttle when I tried to adjust the cables so there was zero slack between roll-on and release. As has already been said, your cables are too tight. Check to see that you have about 1/8 free-play at your throttle. Check free-play with the handlebar straight ahead and also full lock left and right. Also check to see that the throttle tube is not hitting the end of your handlebars. There should be enough clearance between the throttle tube and the handlebar that your throttle moves freely. Be sure your throttle cables are routed correctly, that they are next to the frame and not routed on top of anything else. If you remove the throttle cables and they move stiffly it is time to replace them. I would not lubricate them with anything as they will act sluggish in the winter if you oil them.
