72oz with my math is good for about 1.5-2 hours of backwoods riding, far more if on the slab, and far less if you've dropped your bike in the woods. IMO, get the biggest one you can, because there has *never* been a time I've not had water and not needed it. The weight is minimal compared to pains of heatstroke and dehydration.
