tire recommendation

I know how the list just loves talking about recommending tires but I thought I'd ask anyway. I'm only about 1 1/2 months from my Baja trip and I need a tire to take me from say Detroit-ish to San Diego and back. I'll be swapping some knobblies on for the Baja section and then putting the 'road' tires back on before riding back. Immediately I thought of Gripsters BUT the thing is I'm doing a couple of passes in Colorado (Lizard Head pass, Ophir pass) and maybe some exploring for the rest of the day while I'm there. I'm also planning on Las Vegas to Barstow as well. I'll be loaded a bit but travelling light (relative to the trip duration) so I'm thinking I need something more meaty than the Grips'. As long as the tire lasts there and back I'm happy, and not looking for any more life than that (what's that, 6500 miles round trip???). Recommendations? Also, can anyone recommend (a phone number would be ideal) a good shop in or around San Diego area that I can get tires and have them installed, plus an oil change? Close to main travelling routes is a bonus. Big thanks in advance!
