rear spring adjustment

I just received a new rear shock, and I am going to install it this Sunday. I was wondering what is the appropriate spring setting for a someone who is about 240, and mostly rides on the street. Occasionally I get up into the mountains where I live and can ride fire roads. Also what is the procedure for setting the shock correctly?? Thanks, Robin A15
