sprokets and clutch

Anybody know the best sproket configuration to maintain a 80 mph top speed for the road but get a little better performance in the dirt. Curently my 93 KLR does 105 MPH on the road. I also heard that some after-market premium clutch kits help out a lot too. I do about 80% dirt riding with my KLR.
