I don't know about "normal" Mercedes but I have a 190E 2.3-16 Cosworth and
they also use shims. I'm happy working on the TC but leave this complicated
stuff for the experts.

The valve setting in TC is not that big
deal. The car industry is always developing new more comfortable methods. In
my motorcycle they used shims to compensate the gap. The problem is that you
had to buy the box of shims where you need one or two. So it is cheaper to
give the car or motor cycle to the service shop for vale gap check up.
The MB models since late 1980s are equipped with Hydrostoessel valve gap
compensator always touching the cam. Practically there is no gap.
You can simply describe it this way. We have a screw to adjust valve gap on
our XPAG. Instead of this screw mechanism they fixed a cup with small
spring and valve mechanism. This small cup is covered by a cap ( or up side
down cup). The cap is pressed by means of a small spring against the cam.
The cap also let oil flow into the cup via a small hole (valve). At the
moment the cam start pressing the cap the small hole (Valve) in the cup is
closed and the mechanism will become one solid mass. This oil inside the cup
can not be compressed. But it compensate the gap. So valve gap setting
become history on old cars.
A picture will make it easy to understand. May be I did not describe it
properly.
