Mark, if I get you right, you will use the bike/case for one attachment of a table and need another for support. I carry a piece of 1/8 in melamine hard board in my soft pannier for use on the ground, but for your purpose, I would suggest an adjustable leg.
I also carry one (sometimes two) collapsible hiking poles. Primarily for fly support for my hammock tarp both for when in the trees and when no trees on the ground. For table top, I would suggest plastic polyethylene material (cutting board material).
I also use it for hiking (old knees) and on my last trip it was loaned to a riding partner who needed a cane. (He broke his ankle first day, but kept riding the whole week - story for another day).

Hey Ya'll IT'S COLD OUT, and time to CREATE in the garage, and Before I get TO CREATIVE, ON MY OWN, I thought I would toss it out there, for ideas, BEFORE I make it then get better ideas. When I am OFF road camping, (in the woods ETC ETC.) setting up the stove etc to cook is a pain, and at times, USUALY, theres dry grass leaves etc,, sooooo. I was thinking of designing a "leaf" type table that attaches to the Pelican case. One case is often filled with kitchen stuff and I take it OFF the bike, but the other one can be left on the KLR, and therefor OFF THE GROUND. I ALSO plan on attaching a bunch of "FOOTMAN LOOPS" (FL'S) to all 3 Pelican cases as tie down points. My first thought was placing 2 F.L.'s in a way to use also to slip in hooks to hold the "TABLE" to the case, then come up with a way to hold it in the air STABLE, for putting the Whisperlite stove ETC ETC. ISSUES: Table top, thin and light, for STORAGE, but strong & stable, (leave attached to outside of case?) and what to use to hold it up in-place? (first thought small! chains & hooks? BUT! I want it Higher on the case to stand next to it, Down low on the case I would have been able to hook the chains to the top. of the case. OK ATTACK the issue
