I'm quite happy with the Gripsters but then thirty years ago I rode 650 Triumphs on these same roads and trails using Dunlop K70s and they had a milder tread pattern than Gripsters. I haven't had a knobby for years so I don't know what I would want. I was surprised that the two guys I rode with last weekend would ride 80 - 90MPH on the highway for 100 mile stretches on full, non-DOT approved knobbies and low air pressure. I also use at least 20 lbs in the front and 25 or more in the rear because of frequent highway jaunts. If I did need knobbies, I would probably ask Fred for advice and go with what he recommended. I have two KLRs, but they both run Kenda K270's. I go pretty gonzo off-road and they perform great; hill climbs, water crossings, rocky trails etc. I also regularly commute to work at speeds of 80-105 mph indicated with no problems. Had a speed record of 110 for a two mile stretch last week. They corner well for me too and I take most turns at intersections in third gear with a 16T front sprocket. However, if I'm loaded up with luggage, they get a tiny bit squirrely above 95mph, but no worse than the ol' high front fender-wind-related squirreliness that some folks experience. Other positives: Very inexpensive. They wear evenly as a set. They last for about 5,000-6,500 miles depending on your riding. A set costs less than a front tire of most other brands (~$70). Very easy to mount; a medicated psychopath in a straight-jacket could probably mount them. Oh, and did I mention that they're dirt cheap? Mark B2 (street) A2 (trail)

Very similar to the stockers but slightly wider tread and bigger knobs. Can't vouch for them myself but I think I remember someone on the list was running them. I went through the same dilemma recently and decided to sacrifice my twisties for the dirties. Got some MT21's on order. The list consensus seemed to think they were too pricey for daily slab commute but at $130 for the pair I didn't see many tires much cheaper.
