Not counting the ones that look like Mike Ditka? I'd say three.

The first enduro I entered on the KLR I got passed several times by a
51-year-old grandmother on a KDX200.
She was just tootling along the trail in 1st gear, which is probably why
her bike didn't make it to the 40mi gas stop. I would pass her, then
crash and she'd roll by while I was picking the bike up. Then I'd pass
her and crash again (my arms had pumped up so bad I couldn't pull in the
clutch, and I had the skin on my left hand taped back down with duct
tape).
This happened three or four times, until I bailed out at the gas stop.
Fifteen minutes later she popped out of the woods pushing her bike.
Turned out she'd pushed her bike through 2 miles of deep sand and single
track after it ran out of gas.
She gets the "Ironman" award in my book.

Quite a few, I'd say, but probably outnumbered by man about 20 to 1:
1. A mother and daughter at the Beartooth Rally over labor day with
DR650 and a DRZ400S. There were about 6 DS bikes there, excluding
F650s and GSs, of which there were many, including several ridden by
women.
2. Out of 50 entrants at Enduraid, a DS ride in Wisconsin last June, 3
or 4 were women.
3. My girlfriend, Shelly, who thinks she can ride her R80ST anywhere
since I put DS tires on it.
4. Randy Babcock's daughters who ride a DR350 and a Transalp.
5. Janet Fogg, who goes out trailriding again the next day, after
breaking her foot and 2 ribs.
Plenty of women riding DS. Like the street riders, they have trouble
getting invited on the male bonding expeditions.
