max tire size?

I am getting ready to replace my OEM rim protectors. One of the
tires that looks like it would suit my needs is the Chen Shin C760.
It is patterned after the Metzler Unicross and only comes in 5.60x17
rear and 3.25x21 front. Will I have any interference problems?
Has anyone ever used these? Are they DOT approved?
I have the Kenda 270s on "Little Thumper" and am pretty happy with
them but would like something that will clear the wet clay soil we
have around here a little better, and still be road worthy. These
are my second choice.
