I'm a Kenda 270 fan myself. Love the 3.25 for the front with the wider footprint for soft stuff. Just a bit noisey on the pavement. I have not done it but have heard people on this list mention years back that they could scrap the pegs with them on in the corners. If I would just stay on mainly pavement and good gravel, I love the Avon Gripsters. Getting kinda high buck now. I ran them on the TAT back in 2000 and really never needed more. But, had to drive accordingly in the soft stuff. Air down and slow down.
But, they wear like iron.
Tire scalloping!!!!!!!!! Been with us for as long as I can remember and forget the first one I ever saw. As mention before, many things help prolong it but sometimes, just the tire compound. Put one brand of tire on and your scalloping in 2000 miles, another , with all the same, it starts in 6000 miles. These new dual compound tires for the street really have some weird wear patterns.

I liked the Kenda K761 rear but not the front. Put a TKC80 on the front and
like that better than any 80/20 tire for any kind of dirt. Went with a
Shinko rear this time just to try i it, but now I read some guys think
they're too soft and don't last. Oh well the price is right. Guys say good
things about the Dunplop 606 for a street knobby too. The fronts reportedly
last longer than you would expect.

Most devices are different, so there's no one answer to your question...
I have a Galaxy S2. Not sure how much has changed for the S5, which is obviously quite a bit newer, but on my S2 it's largely transparent where the device chooses to store your data. You normally don't need to worry about it unless you want to.
I store all of my music on my removable card and I think I've got things set up so my photos go there too but, other than that, I just let the phone figure things out.
There's probably a lot more that I could do to tell my phone where to put various things if I could be bothered. A lot of apps will let you customise where their data is stored. It all depends on how much you want to get into configuring things.
